Chipotle-Basil Pesto Salmon
1-2 pounds of salmon filets
2 lemons
1 1/2 cups Santa Barbara Chipotle-Basil Pesto
1/2 cup white wine
Lightly oil baking pan. Put the filets skin side down on the pan. Juice one of the lemons and pour wine onto the fish. Marinate for approximately 15 minutes. Preheat Broiler.
Coat the top side of the salmon with a thick layer of Santa Barbara Chipotle-Basil Pesto (1/8th to 1/4th of an inch thick). Broil the fish for about 9 inches from the heat for 8 to 10 minutes per inch of thickness of the filet. Remove from the oven and squeeze the second lemon over the fish.
