Chicken Pesto Paninis
1 focaccia bread
1/2 cup Santa Barbara Spinach-Cilantro Pesto
1/2 cup diced red onion
1 cup shredded cheese
1 cup diced cooked chicken
1/2 cup diced green bell pepper
Preheat a panini or sandwich grill. Slice focaccia bread horizontally. Spread Santa Barbara Spinach-Cilantro Pesto onto each half of the bread. Layer the bottom with chicken, peppers, onion and cheese. Replace top half of bread and grill for 5 minutes.
