Turkey Quesadilla

    Serves4-6

    1/4 C pine nuts or coarsely chopped walnuts or pecans
    1 four oz. log goat cheese
    3 oz cream cheese
    1 C Fire Roasted Salsa
    1T + chopped cilantro

Heat oven to 350. Toast pine nuts on a baking sheet until lightly browned. Be careful to watch them, they burn easily. Take them out and place in a medium size bowl.

Add the cheeses to the bowl and mix thoroughly. Place mixture into the center of a 9-inch pie plate and form into a 5-inch diameter disk. Spoon the Santa Barbara Salsa on top and around the cheese mixture.

Place the pie plate in the oven and bake until heated through, 10- 15 minutes. Remove from oven and garnish with cilantro sprigs.

Serve with tortilla chips, as a dip. Serve with small slices of a French baguette, as a spread.
